I find it strange that in a world where females easily amount to at least 70% of the overall population there is only one female member in the 3 man Wonderbolt team.

Actually if you watch Episode 16, the three wonderbolts present are two females and a male. The "number" of genders seems to change, but it seems evenly split 3/3 just how many appear of what gender in any given episode is a crap-shoot

In the last episode, there are alot more Wonderbolts as well. Maybe they just don't always pick the same pilots?

Try to compare them to something like the Harlem Globetrotters... you rarely see the whole team at once. Spitfire seems to be one of the featured fliers, however, as she's most often seem, and one the only ones who gets a speaking role (besides Soarin).

If you watch when they show the whole VIP area at the gala, there's like a dozen wonderbolts. Like HB said, there's more of them than perform at any given event.

That's right in line, by the way, with the actual Thunderbirds and Blue Angels performance teams that the WBs are based on. There's 12 Thunderbirds pilots and 16 Blue Angels, but only six perform at a time.
