I know the definition. I'm asking what differentiates the tags on here, as I see a lot of posts that could be tagged with either, or are tagged with both.

Exoskeleton: is an external skeleton commonly found in arthropods as well as in some fictional species.
The tag should be used to the aforementioned structure.
Chitin: is a polymer commonmy found in arthropod exoskeletons.
The tag shouldn't be used, use 'exoskeleton' instead.

Probably. Chitin is also found in fungi cellular walls and mollusks beaks, radulae and internal shells, but I highly doubt that would be a real issue (apparently no one tags those with 'chitin').
