That's the thing with entities associated with Gluttony. They're depicted as having a really shitty metabolism, or at the very least the food they eat outstrips their metabolism. A rail-thin Gluttony misses the point of the mortal sin.

On the other hand, you could say that it makes a lot of sense for the representation of Gluttony to be lean. Maybe not this particular one, but... Condemned to be perpetually starving, constantly eating to drive the hunger away, maybe having to do a lot of work to get scraps, etc. It's not too far fetched.

Maybe I just don't know my sins very well, but isn't Gluttony just over-indulgence, anyway? Not specifically over-eating? Like how everyone thinks Lust relates only to sex.

Not necessarily. They could have a fast metabolism, overindulge on low-calorie foods, or be bulimic.

That was my assumption. that gluttony would just be like one of those characters/people who just eats and never gets fat.

As I understand it, gluttony depicted as someone fat not because gluttony is about eating much, but because gluttony is about eating more than you need to survive/sustain healthy body. That's why Gluttony suppose to be fat even if it has really fast and efficient metabolism.
