I watch a lot of Let's Plays while tagging. Actually, it'd be more accurate to say that listen to them, and only occasionally glance at what's happening on-screen.

Channels such as supergreatfriend, Kikoskia, Bittersweet Gamers, SkadiLP, Materwelonz, MissieMae, Chronos, etc. Channels with zero screaming.

I also like retro gaming channels such as ChinnyVision and GameHammer.

I love watching real professionals react to the portrayals of their profession in film/TV. A few examples:
Mama Doctor Jones. OB/GYN who reacts to a lot of pregnancy episodes from different series.
Legal Eagle. Lawyer who reacts to court scenes and courtroom dramas.
Dr. Hope's Sick Notes. Doctor who has done reactions to the anime Cells At Work, among others like House and Scrubs.

LEMMiNO. 20+ minute documentaries (about top 10 facts and mysterious events) beautifully narrated, animated, and edited by 1 man.
Ahoy. 10~15 minute documentaries (about the history of firearms and their depiction in gaming) also beautifully edited and narrated.
Kings and Generals. 20 minute documentaries on historical conflicts and battle tactics.
Bright Sun Films. 15-20 minute documentaries about failed business ventures and the abandoned structures that were left behind.
Gaming Historian. 10-30 minute documentaries about retro games and consoles.
Internet Historian. On the debacles of gaming, the internet, and many others. Humorously presented to you by your favourite stock photo model.

Yes, I do like me some good documentary channels.

I subscribed to music channels mostly. These are my favs LaBelle, majesticcasual and MrSuicideSheep.I'm glad that I found cool YouTube downloader on site getmp3.me where I can easily convert favorite music to mp3 in high quality and I can choose the quality of the mp3 I want to download. Very convy.

I'm into the Big Three Let's Play channels, but I'm also fixated to art channels like Jazza, Kasey Golden, and Superraedizzle.

Gaming

Outside Xbox / Outside Xtra - Channels about videogames with list videos (7 things in videogames), Let's plays, Livestreams and Dungeon and Dragon sittings (Top tier comedy gold).

Drae - Another Let's Play channel, very funny content mostly

Raptor - Mostly a streamer for RTS games, very entertaining, too

Military and History

Forgotten Weapons - Ian "Gun Jesus" McCollum dissessambles weapons and explains the functions, mechanics and history of them. Here's a reference to him

Spookston - A channel about tanks, flawed vehicle design in games, etc.

Simple History - They often have interesting topics presented in short videos

Extra Credits - Like "Simple History" they have short videos about history but also talk about video game design

Black Rifle Coffee Company - I would say it's an advert channel for the coffee company with the same name, but very cool and entertaining content on there

Music

Megaraptor - Finnish musician that makes metal covers of songs

Jonathan Young - Also makes metal covers, best when it comes to metal covers of Disney songs

Media (Books, TV, Films, etc.)

Terrible Writing Advice - Points out flaws in story telling with total sarcasm. (Hence the name, he says you should TOTALLY do all the bad stuff XD )

Saberspark - Reviews animated shows/movies in a very entertaining way

TheQuartering and Just Some Guy - Both share thoughts about current happenings in the entertainment industry, mostly in regards of how over-the-top political correctness affects the industry or actors that do something really stupid. They have reasonable arguments that are easy to understand.

Besides of those channels, I also watch videos from SaveAFox - Just for the cute foxes in the videos

I too am a fan of Kurzgesagt.
In the same vein, I like CGP Grey an awful lot, too.

Science and Technology:
ElectroBoom is hilarious.
Applied Science plays with lasers and near-zero-kelvin materials, among other random stuff.
PBS Spacetime is fantastic astronomy.
EEVBlog is interesting electronics dismemberment from down-under.
Practical Engineering will learn you some infrastructure.
Real Engineering covers a lot more aerospace stuff.

Videogames:
Retro Game Mechanics Explained can teach you more than you ever thought you wanted to know about the SNES.
Coding Secrets is... well, coding secrets.
8-Bit Music Theory is similarly well-named.
Extra Credits is a bit more on the newbie/casual side, and has a ton of side-content about history and mythology.
Jimquisition fine videogame criticism.

Culture and History:
RedLetterMedia is my favorite group for movie criticism. Don't judge me, they already do.
Patrick H Willems also fine movie criticism.
Abroad in Japan is dry, satirical humor about Japanese travel and culture. Just glad the never-ending cycle of despair did eventually come to a close... successfully!
Overly Sarcastic Productions seems to do a lot of Let's Plays these days... but they cut their teeth and made their core content about mythology, classical history, and fiction. Fantastic stuff, really.

Misc:
Steve Ramsey - Woodworking for Mere Mortals can teach you everything you need to know about carpentry, in between shilling his list of tools to start a shop for under 1000USD.
Fredrik Knudsen will show you all the dark, eccentric corners of humanity.

i'm a massive fan of scott the woz, genuinely hilarious even when he's not trying to be. i've also been getting into smosh a lot recently, but they're pretty big so y'all probably know them?
i'm also really into cinematic excrement, he reviews bad films in depth as well as provides shorter quick reviews on recent films good, bad and in between.

I only just noticed I'm the second person to post to this thread in a month, but I already got pretty far in to making this so here it is anywho.

Entertainment

Bruva Alfabusa Creator of the "If the Emperor had a Text-to-Speech Device" series which I've followed since I was small. Simple animations, and basically a "Warhammer 40k Abridged" series, but choc-full of actual lore references. A much more lighthearted way to get into the source series if you're into that, but there's also a few spin-off bits tossed in too. I'm a sap for tabletop podcasts, and the recent in-fan-universe spin-off Warhams has a hilarious cast of players.

Ordinary Sausage I stumbled on this through a weird rabbit hole that is watching a Berd video and finding this guy as a featured voice. Literally just a channel about turning random foodstuffs into sausages and frying them up. Friends have literally threatened to beat me to death over sharing these, so watch at your own peril hahah

Valve News Network I only really follow this because I fell in love with L4D2 again recently, but I've also just been a giant sap for Valve content since I first got the Orange Box.

Music

Carpenter Brut My favorite music artist in, ever, they make... synthwave music I think? I'm not well-versed in electronic genres, admittedly. Turbo Killer, Cheerleader Effect, and Anarchy Road are pro'lly my favorite tunes.

2 Mello Another favorite musician, 2 Mello's got a few genres under his belt? He's a big fan of Jet Set Radio and Hideki Naganuma (one of the folks who worked on the series' OST) and you can catch some samplings of the latters' work in his tracks. Tag Walls, Punch Fascists is probably my favorite.
