Is there a way to make it so that other users can't see the posts you've uploaded? There are some posts I'd like to put onto the site, but I'm worried that I'll be associated with them somehow, and the thought embarrasses and discourages me.

Not as far as I know. However, you can create a separate account with a name that has no connection to your normal one, and upload the posts you don't want associated with you using that one (I don't believe that's against the rules, feel free to correct me).

It's not, but all rules apply to alternate accounts just as though they were "regular" accounts. Additionally, you should probably avoid voting of any sort on that account, because explicitly using the downvote feature on both accounts against specific comments, posts, and etc. is against the rules.
Essentially, if you want to make a phantom account, you can do so. Just don't use it to vote on stuff or break any rule on it, and if you get any sort of ban on one account do not log onto the other; that constitutes as ban evading and is also punishable. Otherwise, it's OK.
Kind of, but not completely.
If you enable privacy mode in your settings, the uploads will be hidden from your profile page. Take a look at mine, for example.
But someone can still find your uploads by searching for them directly. Ex. user:bitwolfy.
The site has taken some steps to prevent uploads from being associated with specific users.
For example, the post page no longer lists the uploader's name in the sidebar, although it's still possible to find that information by going into the tag history.
If you want to have a completely separate account just for uploads, as Watsit and Siral Exan suggested, that is perfectly fine.
However, you should be very careful with those. Not just talking about ban evasion; circumventing the upload limit by uploading from several accounts is also frowned upon.
Ideally, if you are going to go with that plan, you would only upload on that one account, and literally do nothing else.

Having an e621 account doesn't really factor into the type of things someone may upload. I could definitely see someone not wanting to have, for example, cub rape snuff porn in their upload list. "But you have an e621 account too!" isn't really a comeback for that.
I don't know if this is just anxiety, but I would also advise you to not disclose if you already had another account or you will be doing a new one. I also won't try to explain why, because I don't know who's reading this forum post.
But being as vague as possible. A lot of information is available for members to see mainly regarding post changes, there's also some ppl that have certain "tag patterns".
Anyways, I think this is just anxiety and I'm thinking of every single interation on how something could go wrong. Even disclosing exactly what I'm trying to say it's one of these interations. (╯°□°)╯︵ ┻━┻
making a separate account seems like a lot of trouble to go through just to upload. it probably is just anxiety and i'm overreacting. thank you all for the info
