I just Googled it, and apparently it's a thing, since "8/8" sounds like "ate ate". I'm not really sure what you do on vore day though... I guess you could celebrate by vore'ing your friends, neighbors, coworkers, boss... Just check your local laws on vore-ing people first, I guess.

I think that, like for many such days, you mostly just post and/or look at art.
