I can't find what the minimum quality standards are for posts. Six of my posts were deleted because of it, and I'd like to know exactly how low the minimum standards are. Can anyone tell me?

there are no strict standard because, you know, you cant just rate the quality of art just like that. its the subjective view of the person who deleted it.

Generally speaking, there isn't really any set guidelines. What gets approved mainly depends a lot on who gets to it first. Since art is, by itself, so subjective, it is extremely difficult to define (in words) what standards even mean. It also varies a lot depending on the subject matter (Happy Tree Friends might be okay as is, but if Renamon were drawn with the same amount of detail it probably would be deleted). Can you post links to the pictures? (using imgur.com or the like) I can't tell you exactly why they were deleted but I can give you my best guess on what they may have meant.
Either way, I would recommend sending a polite message to the mod that deleted it (in this case, it was NotMeNotYou) to get a more clear answer to your question.
None of this is specific to you, but I wrote this in another thread and I thought you might be interested in it:
These aren't official guidelines or anything, but these are some of the things I've personally noticed about deleted images:
- Compression artifacts, low resolution
- Art that looks like MS Paint.
- 3D art is variable. Second Life is practically non-existent.
- Quality can go down if it's at least humorous.
- Quality can go down if it's animated.
- Quality can go down if it's an extremely weird, bizarre, or specific fetish.
- Quality tends to be a bit higher with non-explicit but risqué images. Probably because there are so many of them and they clutter up the search for what is essentially fap material.
- "How much of this is coming in at once" - this was a huge issue when ponies started showing up because there was so much of it being submitted that quality standards had to go up slightly to compensate.
- Character generators and obvious tracing (tracing is actually considered art theft by the way).
- Your fursona/ponysona/OC/Mary Sue/etc.

The standards are really subjective and depends on the admin/janitor approving it.
Usually low res/screen caps/unifinished arts are really discouraged to be posted.
Also don't try to repost deleted posts.

I, too, have had several submissions deleted because of this arbitrary, unsubstantiated claim, and, for lack of a better word, I think it is bulls%!t.
My last post was not up for long, but someone faved it--someone whose work clearly established them as a superior artist to myself. If they liked my post enough to be recognized, and this was someone who knew a little something about good and bad art, doesn't that mean my meager work deserves to at least hold a spot on the dusty back corner shelf of this grand exhibit known as e621?
I mean, these admins are not accredited art historians, and they probably got their illustrious position on this website because they knew a guy who knew a guy--so what exactly gives them the right to pass judgement on my art?
I'm not really asking for an explanation because there really is none--besides personal preference. And if personal preference cannot be quantified, then these "minimum quality standards" can't be quantified either.

I hate to sound like an ass, but we moderate the site, so if we don't think it's good enough to be here, we remove it. Simple as that. That's the entire point of quality control. If you want a site with no approval system, post to FA. People don't come here to see shitty ms paint sketches or scribbles on napkins.
