I decided to make an account finally because I thought there would be a way to "follow" multiple artists, but all I can find is image favoriting, am I blind or is this just not a feature?

We don't have on-site artist tracking, but you can subscribe to an RSS feed of any search. Visit the search page for the artist's name (such as blotch), and there should be a button in your browser to subscribe to "e621 - Posts". Then you'll get updates on all new posts with that tag.

If you can't find the subscription button, the URL is this (replace ARTIST with your desired artist tag):
