Why would it be useful?
It may help cut down on abuse of the edit feature.

I'd also like to see perhaps who hide comments/forum posts as well. To me that would be useful to know.
Of course old messages would simply have the default "owner" as the editor since the site wouldn't know who last edited.
Actually it would list old posts as never edited because how it'd likely be done is some added fields to forum posts/comments. And they'd default to never edited.
