The first option seems like it'll cause the least complications, with the most mileage, IMO.
But that really depends on people's expectations for a tag's content

I draw the line at whether it resembles an animal with human bits or a human with animal bits. Animal for the former, humanoid for the latter.

Probably because "cow" is more commonly recognized as referring to that particular bunch of bovines than "cattle". Even the Wikipedia entry on cattle says "colloquially cow" right at the start.

Accurate? Nope, as you and Wikipedia note. But some times "accurate" isn't enough of a reason.
