If I "Edit" a post on the forums (By clicking the edit button and changing the content of the post) does that "bump" that post? Like if I had a post I made years ago, and I wanted to edit it to remove some content that I didn't want online anymore, could I remove it by using edit without bumping that year old post?

No. You have to manually comment to bump it.

Edits definitely do not change the timestamp. The thread's most recent update is based on the timestamps, so as long as those don't change, the thread is not bumped.
