Paper Mario has a race known as "Stars," whereas the 3d-world counterpart seems to be "Star Sprites." Star is already a generic tag, though, so should we consider these entities as the equivelant of Star Sprites, just their entire body is a star rather than detached-hair/halo?

While Paper Mario does have the "Star Spirits," that's a job title, not a species. There's also the "Star Kids," but that refers to the prepubescent stage of the stars, which means they haven't yet risen to the sky.
