I find it odd that one of the lesser used names for Final Fantasy's Ifrit is used as the default one. It would make more sense IMO to just go with his more commonly used name.

It's one of ImpidiDinkaDoo's aliases.
They made hundreds of them, with no discussion at all. The vast majority of those are good. Some aren't.
I know less than nothing about Final Fantasy, so I can't really weigh in on which name would be preferable without doing some research.
But if you do want to change the tag over, you would have to make a BUR, in two parts.
First, remove all tag relationships from iflyte_(ff).
unalias ifurīto_(final_fantasy) -> iflyte_(ff) unalias ifrit_(final_fantasy) -> iflyte_(ff) unalias iflyte_(final_fantasy) -> iflyte_(ff) unalias jinn_(final_fantasy) -> iflyte_(ff) unalias ifurito_(final_fantasy) -> iflyte_(ff) unalias ifrit_(ff) -> iflyte_(ff) unalias ifurito_(ff) -> iflyte_(ff) unalias jinn_(ff) -> iflyte_(ff) unalias ifurīto_(ff) -> iflyte_(ff) unimply iflyte_(ff) -> final_fantasy
Then, after that gets approved, realias everything to ifrit_(final_fantasy).
alias iflyte_(ff) -> ifrit_(final_fantasy) alias ifurīto_(final_fantasy) -> ifrit_(final_fantasy) alias iflyte_(final_fantasy) -> ifrit_(final_fantasy) alias jinn_(final_fantasy) -> ifrit_(final_fantasy) alias ifurito_(final_fantasy) -> ifrit_(final_fantasy) alias ifrit_(ff) -> ifrit_(final_fantasy) alias ifurito_(ff) -> ifrit_(final_fantasy) alias jinn_(ff) -> ifrit_(final_fantasy) alias ifurīto_(ff) -> ifrit_(final_fantasy) imply ifrit_(final_fantasy) -> final_fantasy
BURs made using my alias reverser tool

remove alias ifurīto_(final_fantasy) (0) -> iflyte_(ff) (0)
remove alias ifrit_(final_fantasy) (106) -> iflyte_(ff) (0)
remove alias iflyte_(final_fantasy) (0) -> iflyte_(ff) (0)
remove alias jinn_(final_fantasy) (0) -> iflyte_(ff) (0)
remove alias ifurito_(final_fantasy) (0) -> iflyte_(ff) (0)
remove alias ifrit_(ff) (0) -> iflyte_(ff) (0)
remove alias ifurito_(ff) (0) -> iflyte_(ff) (0)
remove alias jinn_(ff) (0) -> iflyte_(ff) (0)
remove alias ifurīto_(ff) (0) -> iflyte_(ff) (0)
remove implication iflyte_(ff) (0) -> final_fantasy (17903)
Reason: To my understanding, "Iflyte" is just a mistranslation of Ifrit, and has only been used officially in two early '90s Final Fantasy games. Meanwhile, "Ifrit" is the spelling used not only in 20+ other Final Fantasy games, but is also one of the most common spellings when regarding the mythology it comes from. By all rights, "iflyte" shouldn't be used as the main tag for this.

I wasn't really around when they were active, but I've seen their name get brought up a few times. What exactly was the... deal with them, if I may ask?

Well, I pretty much already said all there is to say about them.
ImpidiDinkaDoo is responsible for 23092 aliases and 12055 implications.
Not an exaggeration – these are real numbers. It's both extremely impressive and terrifying.
If you are interested, I have created a full list of their aliases and implications, in the hopes that someone will at some point gather enough willpower to review them all.
As you can see, most of those are completely reasonable. Some are not.
Some used to be fine, but since the site is moving away from having unicode in tag names, they have to be changed.

A staff member who was very active in the request approval/denial scene, but tried a little too hard and goofed a few things. It's a little disappointing when you come across the goof-ups, but it's also understandable for how many good ones were done.
Sadly, ImpidiDinkyDoo did seem to mind, and chose to resign.

create alias iflyte_(ff) (0) -> ifrit_(final_fantasy) (106)
create implication ifrit_(final_fantasy) (106) -> final_fantasy (17903)
Reason: I don't think it's necessary to recreate all of those aliases up there, at least not pre-emptively.
There is a bit of a question over whether the new tag's suffix should be _(ff) or _(final_fantasy). There are many more tags with the full name, some of which have a lot of posts, but the only implications to final_fantasy all use the short name. Additionally, although there are far fewer tags using the short name, one of them is the most populous tag among both groups - behemoth_(ff). Then again, the second most popular tag in the shortened list is this tag's old name, so perhaps we shouldn't take that as proof of validity. All in all, I think it's a wash.

Full name seems better because it's not that long of a title, only two words, and there may be other copyrights that shorten to FF

In this case, I wonder if it should be either. Ifrit has quite a few different designs throughout the series, ranging from a red scalie feral monster to a green horned humanoid, and many other designs fitting in between. There should probably be different suffixes for the different designs.

Yeah, reserving suffix tags like ifrit_(ff6) and ifrit_(ff14) makes sense because of how much the design has changed from game to game. It also could be hard to maintain since there are just so many different versions of the character across different games. It gets even worse if we include spinoff and remake designs. It also opens the president for doing the same for other final fantasy characters and species that have the same kind of design changes with each title, like moogles and malboro. It would be valuable work, but still a lot of work.
Here's a BUR to change the current implied *_(ff) tags to *_(final_fantasy): topic #38923
I've never played any final fantasy games so not sure if those particular characters in my BUR are ones that would need individual game suffixes or not. If not, though, then perhaps it could be useful
