So impulsively a few days ago I decided I was seeing a little too much Helluva Boss and Security Breach fanart and would really like to just filter and see recent OC content. Seems simple, but I can't figure out how to do it using tags

There is of course the original_character tag, but it implicates to fan_character which is a whole lot of ponysona and Pokesona type content, which is almost the opposite of what I really want to see

It seems like that information is in the database, but not in a form I can do anything with. Helluva Boss and Security Breach content, same as MLP and Sonic and Pokemon and everything else with commercial origins are flagged purple with the copyright: tag category, but I can't find a way to exclude all those tags in a search I can only exclude them one by one, individually

I'm not missing something here, am I? Is there currently a way to search for original character art with no purple copyright tags? And if not, is this something anybody else feels like would be useful and worth implementing in the future?

It depends on what you mean by "OC". The reason original_character was aliased to fan_character in the first place is because a lot of people used it to mean a new personal character in/for a pre-established setting (e.g. a new "original" pony character doing stuff with canon MLP characters, or someone's Sonic-style character doing stuff with Sonic). The line for what counts as an Original Character as opposed to a Fan Character then becomes blurry. For some, an original story with a completely unique cast of characters in their own canon can be called original characters, even if the setting is based on some franchise as long as there's no direct links to any canon characters from the source material (beyond a simple cameo at most), while other people think that if there's any link at all, including simply being a species from an existing franchise, it shouldn't count for being an Original Character no matter how different they may be.

So it's not really that simple to "just filter and see recent OC content", since there's no clear meaning to what "OC content" is and different people will have different criteria.

Include copytags:0 in your search. But note that copyright tags sometimes include a creator's own setting (e.g. Frisky Ferals or Twokinds are examples where it's the creator's own setting with their own characters, but still has a copyright tag). Copyright tags are also used for memes and certain "themes", like Christmas or Halloween.
