My most recent submissions (post #3359249 / post #3359236) have been approved, but my profile's submission count still says "16 [pending]" as if they weren't. Is something wrong?

Nah, you're all good. The 16 part is the number approved uploads you have posted while the [pending] part is just a quick link to any uploads that are still pending.
