In my part of the world (western USA), "bed sheet" is usually used in the singular but "sheets" is plural. And my guess would be because it's common practice for sheets to come in sets of two, with one bottom sheet going around the mattress (sometimes fitted with elastic to make that easier) and one regular flat sheet going between the person and any blankets, etc. Since they are often used and sold as a set, people use the plural: sheets. "Bed sheet" isn't used as often, mainly used to emphasize something about a single sheet, so if used at all it's often singular.

I'm sure it's regional though. These things often are. As for the tags:

sheet is often messy in use between model_sheet and sheets. Though I don't know how often that really occurs, or if the ones under there now are accumulated over years. If it's a rare mistake (leaving out an underscore one image every 4 months or so) that was just never cleaned up, then it might not be much of an issue.

Other forms of the tag which need aliased are:
bedsheet
bedsheets
bed_sheet
bed_sheets

Though I wonder about choosing one of those to be the final tag, and alias the rest to that instead, since it would be more clear. I know when I first joined the site, I remember finding that one of these (it was either sheet or sheets) actually had sheets of paper and sheet_music tagged under it. I think I fixed it and since I don't see anything like that now, that could have just been one person's mistake. But aliasing everything to something like bed_sheet would also make it clearer the type of sheet it's being used for, as well as making both "sheet" and "sheets" into shorthand versions of the tag. Which seems like it has a lot of benefits.

+1 to this. It also makes it a lot more obvious if someone mistags it.
