    bit late, buuuut if you still wonder

    Ratio means how much of coffee grounds were used for given weight of liquid coffee in cup. So in case of 20 grams of grounds in and 40 grams of liquid out so ratio is 1:2. Classic espresso ration, bit on shorter side (some do up to 1:2.5 - 1:3)

    More water means you extract more taste from grounds, but your end result gets less strong (lower ration of dissolved coffee). If you do too much water you will enter over extraction zone and coffee will start to feel more bitter.
    Less water means stronger, thicker coffee, but you risk under extraction and coffee will start to taste sour.

    Knowing exact dose helps too, you'll get bit different coffee from 15g in 30g out than 20g in, 40g, out cause more coffee give bigger resistance so there may be some variance in end result.

    Different coffees may require bit different ratios and doses to get the best of them in espresso, grinding settings, and grinder used and roast level of beans bring some variance to that.

    So basically you ask someone who worked on given beans, grinder and machine what they thinks works the best. Of course preferences may vary.
