Because I have always taken that to just be a way to let the player sort of decide for themselves what Kris's gender is.

You know... like they did with Chara? And Frisk?

well, other characters in undertale, like monster kid and napastablook, have "they" used for them, even in offical art books i believe, so I think that shows "they" has never been solely used for characters one projects on to, and kris is supposed to be separate from the player, thats an important theme of the game. with kris ripping out the heart to be free from the player.

It's fine, and I also don't want to come off as rude or facetious, but I just get a little frustrated with people preaching this like it's the gospel truth when it is, in fact, extremely ambiguous.

I have no doubt that Kris is officially referred to as 'they'. What I do doubt is the idea that they are explicitly non-binary, as opposed to having an undisclosed or ambiguous gender.

As far as I'm concerned, Kris is whatever the player wants them to be, be that male, female, non-binary, transgendered, and so on. If it's ever stated in an official capacity that they are non-binary, then I'll be the first one to eat crow.

In the scene with Susie and Noelle on the ferris wheel, it is revealed that Susie does have a tail, but she is embarrassed by it and hides it while telling/threatening people she doesn't have one.

So clearly that jevilstail comment is her lying about growing a tail, as she is hiding the fact she already has a tail.
