I imagine the logic (porn-logic as it is) would be that the swelling from her ass getting sore, is severe enough, and happens often enough, that over time, her ass simply settles into being its more swollen size, only for the spanks to continue, and her already size-increased ass to get even bigger… that the explanation I’d use anyways.

To be fair, it’s been confirmed that regularly massaging breasts makes them bigger so your explanation works pretty well. Though I doubt it’d work in real life.
