Underscores for multi word names, and you can replace the artist: with character:, copyright:, or species: to create a new tag in that category.

Just do make sure first that the name you're about to use isn't already being used for something in another category, else you'll change it and a whole bunch of older posts potentially get mislabeled.
In that case, it's best to use something like a suffix to make the new tag seperate from the existing one. Like, art:coffee should never happen for obvious reasons, but art:coffee_(artist) can.
