I want to be able to sort all posts I've liked in order of the newest liked ones to the oldest liked ones

That's what favourites are for.

The reason you can't have more than 80,000 favourites is more or less entirely because the work of maintaining a huge date-ordered list for every user was putting too much strain on the site.
