I know there's some characters named pickle, but in this instance I think most reasonable users would understand that the pickle tag is for the food and that characters need a suffix

Not sure why the disambiguation was removed, but it should not have.

Your assumption is that most reasonable users would know how to use the suffix. Reality is, like with every disambiguation tag, people don't.
They will just tag pickle and be on their way, be it for the food or for character names.

If you truly believe most people are that reasonable, then most of the other *_(food) & disambiguation tags should be phased out as well (e.g., biscuit_(disambiguation)).
