Do you have a source to that statement? Because it just seems a bit odd that his avian species would be called 'minstrel', while the only specimen we've seen so far is also a literal minstrel.
If that by extension means all of his kind are travelling musicians (for whatever reason), then that's almost no more creative of Nintendo than calling the Rito "Mailmen" would have been, because most of them happened to be involved in mail delivery. They didn't do that, because that would have sounded stupid. So... why this, now? =/

When I heard the term minstrel spoken in the gameplay demo I just thought of the definition I knew. Minstrels being thin fenangly strips that flow in the air. Fitting for a race of birds. But from what you've told me it could very well be that they were really just stating his profession.

I like your interpretation though, hadn't even begun to think of it like that, but I'm still 90% sure they were just referring to him being all "Let me guide you along in song on my boss accordion! See, that almost rhymed twice because it's what I do!"
