Yeah, but you can either see them used by trainers or scan them in with QR codes. Just like non alola form Pokemon. You can have them in the dex just not have them in your party.
Not exactly sure how people don't think about that, but this situation happens all the time from gen to gen, like for Ruby/Sapphire where a lot of gen1/2 Pokemon were unavailable to catch but still have a Pokedex entries and data nonetheless because they are planning to get them available on other games so you could trade them in if you really want to.
Gen7 makes it even more obvious with Pokemon Bank and how in gen7, every Pokemon were made available
