Could just be ambient light in the water that makes it look purple. On the other hand, Bowser is perfectly at home in volcanic temperatures, so maybe this is something else that's normal for him.

It could just be purple slime. Not the stuff you'd make from glue and borax, as that's too viscous, but still some other sort of slime.
