    I think it was just popular because it was something really simple to draw that came out perfectly symmetrical and mirrored on both ends if you did it right

    We may never know, However we do know where we saw it thoughout history. The "Cool S", also known as the "Stüssy S", "Super S", "Superman S", "Pointy S", "Graffiti S", "The S Factor", "Universal S", and many other names, is a graffiti sign in popular culture that is typically doodled on children's notebooks or graffitied on walls. The exact origin of the "Cool S" is unknown. But i think it dates way back to or even before 1939 as it was found in a 1939 drawing book.
