    Maybe because 'gryphon' is a Latinization of a thousands-of-years-old Greek mythological creature while 'gryphound' is a fabrication of of a few modern fantasy authors which is hardly well-known or in vogue?

    Some do, some don't. They're mythological creatures, and other than incorporating elements of a lion's body and an eagle's head there's a LOT of variation, even going as far back as Babylonian, Greek and Minoan civilization. Some have wings, some don't. There's a special name for these in 15th century heraldry but that's MUCH later.
