We didn't. Their meat was too tough. What happened was that on the island where they lived, they had no natural enemies. But then mankind introduced them to dogs and being hunted. Plus back then, we didn't really think about preserving any live specimens. So... They went extinct the moment mankind set foot in their habitat.
