Well I remember there were some measurements made when there was official artwork of the equestria girls standing side by side with the ponies and people determined a few characters heights. I remember Big Mac was roughly 6'4" which is around 1.95 meters and we know Celestia is roughly 50% taller than Mac so it's safe to say Celestia is around 3 meters tall so I'd say ember is roughly 2.4 meters tall which is about what she is here. So yeah. Sun Butt is pretty huge
