It would be really nice if this became cannon. She's such a sweet character and is deserving of that dream.

It is similar to a liger (lion and tiger) or a mule/hinny (horse and donkey).
In lore, she was bred from both canine and feline for the body she has but the downside was the infertility.

They way i got it was that canine and feline keidran can breed. It's just that Kathrin was created through several generations worth of selective breeding to create the perfect slave girl, presumably involving quite a bit of inbreeding too. Infertility generated from overbreeding is common in real life.

I can't remember how much it was talked about in-comic but I assumed it was by design, given she was literally bred to be a pleasure slave.

As she probably didn't specify, the wish just "restored" her normal biological functions and going into heat would still be a requirement for fertility.

Not quite, I remember between some sketches and comic chapters, she was gifted to Eric since she was infertile (how they did know it from a new born? that's beyond my mind. Tom needs to patch that eventually and say how), so she originally would end like her mother as a breeder slave.
