I understand that would suit better if it was "like a sibling" instead of "like a brother/sister".

Actually, it might work both ways.

"I love you like a sister" puts the focus on her, a statement that his love for her is the kind of would have for their sister.

"I love you like a brother" puts the focus on his feelings, as in "I love you like a brother should," in the way that a brother would.

It's kind of hard to describe the nuance, but I feel like it could still work either way.

EDIT: I want to add that I think the fact that both of them are blushing is adorable.
