Or it's just another person that picks their flesh off their fingers when they are nervous, there are lots of people that do that still.

I'm perty sure that if the guy deals with baby chicks, and is taking pictures of them, then it's more likely to not be nervousness and more likely to be the bird's fault O_o It's unusual for someone to pick the flesh of -all- their fingers, usually the thumbs and pointer fingers are the most often damaged in that case.

That isn't good. Pluckin- er... biting? Is a serious behavioral problem. If he is self mutilating, he needs more external stimulation. He should be handled more often, perhaps put a mirror in his bedroom so he thinks there is another Human around.
