The fox is imagining himself eating chicken with the 'coon in the background imagining -himself- eating chicken with the fox imaging the opposite which is what the 'coon is thinking too.

Seems more to me like they are both imagining each other stealing food from the other.

At least to me is seems they are both imagining having food while the other just stands there. While the imaged other imagines having food as well. No envy, just wanting a meal. Though they both want to have food while the other doesn't so maybe wanting to gloat or just see the other at a disadvantage.
