Does anyone knows what happens to the soul of clover after undertale's ending? Is so sad that they basically dies after yellow.

Firstly, all of Undertale's endings are canon: the ending you get is the one that's canon. In most endings, Frisk takes the Souls to the surface after defeating Asgore and Flowey. As for the True Pacifist and No Mercy endings, Undertale gives no definitive answer to that. It's likely the souls were all released.
