Like mud, a slurry of water and dirt. However, quicksand has a significant quantity of sand and clay in the mixture, increasing its thickness and adhesion, making it difficult to extricate oneself from. Quicksand is potentially deadly, not because of the likelihood of drowning—one generally sinks to about center-of-mass and the pool is usually 4-5 feet deep—but because of exposure or starvation/dehydration.
In fiction, however, there is often an inexplicable suction that swallows the character whole.
