MemberAll of the eeveelutions are pretty ambiguous with the exception of Espeon, so it's why you see them all drawn differently. I'm personally far more fond of the more catlike renditions of Umbreon.

MemberI'll just add this one in. All Eeveelutions are based on the Fennec fox. As such, I myself do consider all as canines. Even the majestic kitty Espeon.

Former StaffGood eye. According to Sugimori, they're based on cabbits. Which is pretty obvious from the official art. Cabbits were popular in Japanese media back when the first gen was released. ...don't see them much in anime/manga nowadays, though.
