vaginectomy
Vaginectomy is the removal of the pussy and all of its associated external and internal parts, rending the former female character into a nullo (a person with their genitals removed). This could happen through surgery or (intentional or accidental) physical trauma.
This differs from sewing the vaginal entrance shut as this involves the removal of the sex organ in its entirety.
